Vegan Brothy Rice Bowls!

These new brothy rice bowls got an immediate stamp of approval from everyone the first time I made them. They are almost like a cross between a soup and a salad, and so perfect for spring because they're both cozy and super fresh!

The highlights:

  • Ready in the time it takes the rice to cook. No more than 25 to 30 mins start to finish!
  • Luscious, super-flavourful broth (that also happens to be really easy).
  • Fluffy rice.
  • Sticky, caramelized vegan ground beef (or my shredded tofu)
  • Toppings of choice. My faves here are diced cucumber, fresh mint, green onion, and a drizzle of chili oil, but I give lots of other ideas in the post.
  • Meal prep friendly. Every component can be made and kept in the fridge or freezer, so your midweek dinners can be even easier.
