5 Weeknight Dinners That Feel Like Summer β˜€οΈ

There is no need to stand in front of the fridge wondering what to make for dinner...These five well-loved dinners make summer weeknights feel really good!


Skillet Tofu with Zucchini

A great way to use zucchini. Delicious served with rice, pasta, or mashed potatoes and is ready in under 30 minutes.


Tomato Fritters

These Tomato Fritters are really quick and easy. Ready in less than 15 minutes! I love them with a crisp salad and a big dollop of vegan sriracha sauce.


Easy Fig Pasta

I've got 2 fig trees, so this ends up on the table often during fig season. It's ridiculously simple and one of my favourite pasta dishes. I'd eat it all year long if I could!


Easy Ratatouille

Simple, humble, and bursting with summer Mediterranean flavours! Amazing with just some good crusty bread to mop up the sauce or over a pile of fluffy rice.


Vegan Corn Chowder

Ready in under 30 minutes and loaded with tender, sweet summer corn and soft, creamy potatoes. (You can use frozen corn if you don't have fresh.) I LOVE to serve my corn chowder with a scattering of diced raw red bell pepper. It might sound odd, but the flavour/texture contrast works so well, and it looks pretty too!
