If you checked the weather forecast for the next week or two and immediately thought β€œabsolutely not” while looking at your kitchen, you’re in the right place!

Below, you'll find some no-cook and minimal-cook recipes for when it’s too hot to turn on the oven.

I won't be joining you though, because I just got a fancy new range and I'll be cooking in (and on it) come hell or high water with the air con cranked (despite the complaints of my husband), at least until the novelty wears off! πŸ˜†


Peanut Noodles

These delicious noodles with lots of fresh, raw veggies are ready in less than 15 minutes, and the only cooking involved is boiling the noodles. They can be enjoyed warm or cold.


Stuffed Cucumber Cups

I've been making these crunchy, cool little cucumber wells stuffed with creamy chickpea salad all the time lately. So good, refreshing, and satisfying!


Peach Quinoa Salad

I think this is the best salad I've ever made. If you haven't tried it yet, you really should while peaches are still in season!


Easy Broccoli Pasta

This one is really quick, easy, fresh, and citrusy. You only have to boil some pasta, and the broccoli gets cooked right in there with it. It's easily ready in only 15 minutes.


Kale Pesto

This pesto is ready in minutes and is a great way to use up lots of kale. Toss through freshly cooked spaghetti and top with some vegan parm for a very quick dinner, use instead of (or as well as) pizza sauce on pizza, use in paninis and sandwiches, to make salad dressings, to coat tofu, toss with steamed veggies, etc.


Miso Zoodles

These no-cook Vegan Miso Zucchini Noodles are summery, fresh, healthy, light, and ready in under 15 minutes! No spiralizer? You can coarsely grate the zucchini instead, and it will be more salad-like than noodle-like. Still just as delicous though!


Peanut Crunch Salad

This is a salad-in-a-jar recipe, but there's nothing to say you can't make it in a bowl like a regular salad if that's not your thing. There's barely any cooking, and it's great topped with some tofu or vegan chick'n for dinner. I buy blocks of smoked tofu, and they are good eaten straight from the packet with no cooking.


Tomato Fritters

Love, love, love this recipe! It's so easy to make, great for using up lots of tomatoes, and the fritters cook in as little as 13 minutes in a skillet/frying pan on the stovetop. They are really great served with a crisp, fresh salad.


High Protein Tofu Smoothie

Anyone else sometimes just make a smoothie for dinner and call it a day? πŸ™‹πŸ»β€β™€οΈ This one makes a great occasional meal replacement when it's too hot to do anything much at all. It's packed with protein and healthy fats, and it tastes like chocolate pudding!


Peanut Butter Ice Cream Bars

If you read the title and thought "no way, that's too difficult", look again because these are SO easy and incredibly good. No special equipment. Just a blender or a food processor and an 8 x 8-inch pan (if you only have a loaf pan, half the recipe).
