Last minute Christmas Sides ✨

Hi there, Reader

Side dishes are the unsung heroes of the Christmas dinner table, and here are some last-minute, easy-ish crowd-pleasers that can mostly all be made ahead, work with any main, and will keep everyone happy, vegan or not.

I hope you have a wonderfully festive holiday week!

Quinoa Cranberry Salad

This fresh, zippy, festive-looking salad is great for cutting through the richness of your holiday feast. You can make much of it ahead of time, but for ultimate freshness and peak presentation, I recommend shredding and adding the spinach shortly before serving.

Red Cabbage & Apples

Red cabbage baked with apples, onion, and herbs until fall-apart tender. This delicous side adds a pop of beautiful colour to your table, and the smell while it's cooking is something else! This dish reheats brilliantly, so you can easily cook it in advance and reheat it on the day.

Mashed Potato Casserole

Creamy mashed potatoes with a golden, crispy-crunchy, cheesy, oniony topping. Always a go-to for me when feeding a crowd because you can assemble it up to 3 days ahead, then just pop it in the oven when you need it.

Make Ahead No Knead Dinner Rolls

These dinner rolls are buttery, fluffy, golden, and unbelievably delicious. You don't need a mixer to make them, and you can prep and store them in the fridge for up to 24 hours before baking. They also reheat brilliantly if you want to bake them in advance and reheat before serving.

Air Fryer Lemon Garlic Roast Potatoes

Utilize your air fryer to free up space in the oven. These potatoes are incredibly delicious, and you don't even need to parboil the potatoes or peel the garlic!

Garlic Bread

I've never met anyone who didn't like garlic bread! It makes a great side or appetizer. You can prep this recipe ahead, wrap it up and freeze it, then bake straight from the freezer. When it's just us, we cook and eat half of it, then freeze the other for another day.

7 - Caramelized Brussels Sprouts

The sprouts you just cannot stop eating! Golden, sticky, sweet, tangy, and a little spicy, they are absolutely impossible to resist and go with pretty much anything.

Vegan Scalloped Potatoes

Thinly sliced potatoes layered up in an easy, creamy, savoury sauce and baked until meltingly soft, golden and bubbly! I've included instructions for assembling and parbaking these ahead of time to make things quicker and easier on the day.

Super Easy Vegan Gravy

This easy gravy made with pantry staples is ready in less than 10 minutes and can be made ahead. Either store it in a container in the fridge or freeze it. Just make sure you remember to defrost it!

Brussels Sprout Salad

This shredded Brussels sprout salad with pecans and a festive orange cinnamon dressing makes a great addition to any holiday table. If you can get one, some fresh pomegranate arils look really pretty on this and add some extra flavour and texture.

Broccoli Salad

A delicious blend of broccoli, red grapes, toasted slivered almonds and a tangy, creamy dressing. It's perfectly crunchy, creamy, sweet, and savoury and keeps well for 3 days in the fridge (just keep the crunchy nuts separate and add them when serving).
