Nourishing Recipes For January

Ooof. Coming back to work this week has been a bit of a shock to the system, but I'm more than ready to get some normalcy, routine, and nourishment back in my life.

If you're also easing back into the new year and want some recipes that will help you feel nourished and well-fed without any restriction (we don't do diet culture here at AVV), here are some of my most popular healthier recipes!


Vegan Potato Soup

This soup is known as "The Soup" by quite a number of you and is one of my personal favourites. It's creamy, cozy and very budget-friendly. Make it as written and choose your own adventure with the toppings!


High-Protein Tofu Smoothie

28 grams of protein per serving and so satiating! When blending this smoothie, it gets really thick and bubbly. It reminds me of a liquid chocolate mousse, and it tastes like dessert, too!


Healthy Vegan Biscuits

These simple, foolproof, and completely oil-free drop biscuits are super speedy to make. You can have them mixed, baked and ready to eat in about 15 minutes!


Cauliflower Alfredo

The humble cauliflower is one of my favourite veggies, and I can't remember why I tried making it into an alfredo-style sauce the first time, but I'm so glad I did! You will be amazed at how silky the blended cauliflower gets. The finished sauce is super creamy and coats and clings to the fettuccine perfectly. I love this with some of my nooch tofu piled on top (it's next in the list โฌ‡๏ธ).


Nutritional Yeast Tofu

Last year's most popular recipe! This is so quick and easy. You don't even have to press the tofu! You can make it to snack on, add it to salads or bowl meals, top your creamy pastas or risottos with it, stuff it in tacos, eat it with fries: the world is your oyster nooch tofu!


Smoky Spiced Chickpeas in Tomato Sauce

Ready in under 20 minutes! I love this served over piles of fluffy couscous, rice, or mashed potatoes with some steamed green veggies on the side.


7 - Braised White Beans & Greens

I make this recipe all the time. It's quick, easy, super nourishing, and you can use any leafy greens you have on hand.


Peanut Butter Banana Oatmeal Cookies

I love making a batch of these healthy cookies for quick breakfasts or snacks. Just 4 ingredients, 15 minutes, and you can make them in an oven or air fryer.


Sweet Potato Chocolate Pudding

Trust me on this one - It sounds weird, but is SO good! Velvety, thick, smooth and rich while being secretly healthy. (Note that you don't need a pomegranate for it. That was just for some colour in the pics.)


Morning Glory Muffins

These muffins are bursting with goodness! Wholegrain flour, carrots, bananas, dates, and so many seeds! Note that as long as you keep the base recipe the same, you can replace the seeds with any mix-ins you like. It's a great recipe for using up those odds and ends and open bags in the pantry!
