These 6 Recipes = My Current Effort Level

Life feels a lot sometimes. It's like you're constantly running from thing to thing to thing to thing, and it can be super overwhelming.

So here are some deliciously simple, doable meals that barely require any thinking, prep, or time. Weeknight lifesavers if you will, but still cozy and delicious, because we all kind of need that in the depths of November and December, right?!


One Pot Spaghetti Bolognese

Everything (yes, everything, even the spaghetti!) goes in one pot. It's so mindlessly easy and is ready in under 20 minutes!


Ridiculously Easy Vegan Noodles

These noodles are for when you really can't be bothered. They take just a few minutes to make and are slurpy and delicious. I often eat them with some chili crisp and snipped green onions and call it a day, but you can add some extras like tofu, crispy breaded chick'n, or veggies to round things out if you want.


Sweet Potato Soup

6 ingredients. One pan. Low effort. Very delicious!


Vegan Shakshuka

Got a can of diced tomatoes and some tofu? Shakshuka, here we come! It's traditionally served for brunch, but I often eat it for dinner. It's so quick and easy, and the only side you need is crusty bread to mop up the sauce!


Shredded Tofu

Make up a batch of this, toss it in some store-bought BBQ sauce, then use it to fill taco shells or burger buns. Top with your fave toppings like shredded lettuce or cabbage, pickled jalapenos, cilantro, green onions, avocado, shredded vegan cheese, etc, and dinner's done!


Easy Cheesy Pasta

Whip up one of these vegan cheese sauces in your blender (one is cashew-based, and the other is nut-free and virtually fat-free). Cook some pasta, drain, return to the pan and pour over as much sauce as needed to coat generously. Warm gently, then serve. My favourite topping for this is some quick pan-roasted cherry tomatoes. Throw them in a hot pan with olive oil and lots of salt and pepper, and cook at the same time as the pasta until jammy and bursty! Roasted, air-fried, or steamed broccoli pairs very nicely with it, too!
