It’s summertime and the tomatoes are overflowing! Here are some of my favourite recipes to take full advantage of their sweet, juicy, bursty goodness - Family favourite fritters, the easiest soup, a protein-packed salad, swirly saucy spaghetti, and a one-pan wonder!

Simple Tomato Fritters

Simple Tomato Fritters made with just a handful of ingredients. Super quick, easy, and BIG on flavour. I love serving these with the creamy sriracha sauce featured in the picture. Yum!


Quick & Easy Tomato Basil Soup

The easiest Tomato Basil Soup EVER, and it's so fresh & vibrant. Ready in just 10 minutes and made with only 4 ingredients (plus salt, pepper & optional olive oil).


Cherry Tomato Pasta Sauce

Cozy, rustic, and rich Cherry Tomato Sauce made with just 6 ingredients. Ready in less than 20 minutes and perfect with pasta for an easy dinner.


Tomato Chickpea Salad

A healthy, filling Tomato Chickpea Salad that's packed with fresh, citrusy, herby flavour and can be made in minutes!


Baked Vegan Orzo

An easy, throw-it-all-in, one-pot wonder featuring tender orzo, cherry tomatoes (3 cups, although you could get away with even more!) & veggies topped with melty cheese!
