It only feels right to be coming at you with some Thanksgiving inspiration. If, like me, you're not celebrating Thanksgiving soon (in Canada, we had ours back in October!), file these recipes away for future festivities.
I always make some combination of these recipes for our Thanksgiving, with my current fave combo being the ham, mashed potato casserole and caramelized brussels sprouts. They make such a delicious plate!
I hope this gives you some great menu planning ideas!
#1 Vegan Ham
This glazed seitan ham is sticky, tender, juicy, smoky, sweet, perfectly meaty, and delicious! You can bake it a few days ahead, store it in the fridge, then score and glaze on the day. It also makes great lunch meat when it's not the holidays!
#2 Mashed Potato Casserole
Mash up the creamy tater filling, sprinkle over the cheesy, oniony, crispy topping, and bake up to golden perfection. Or assemble and stash it in the fridge for up to 3 days.
Don't just save this one for the holidays. I make it for regular dinners all the time. It's one of my all-time faves!
#3 The Best Sweet Potatoes
These amazing sweet potatoes are cooked in plenty of vegan butter and stock so they suck up all of that lovely flavour before roasting themselves to golden, sticky, melty perfection. Then comes a tumble of candied pecans. So good!
#4 Easy Cranberry Sauce
Quick and easy to make at home and WAY better than anything from a jar or can! (Comes with stovetop & Instant Pot instructions).
#5 Incredible Mashed Potatoes
Not your average mashed potatoes! These are super buttery and infused with herbs and garlic. They can even be made ahead. See the recipe notes for how to reheat in the oven or in a slow cooker (great for saving oven space).
#6 Vegan Sweet Potato Casserole
This sweet potato casserole is deliciously sweet and savory, with an irresistible, buttery pecan crumble topping! This can be made up to 2 days ahead. Store the crumble topping separately from the sweet potato layer until you bake it.
#7 Green Bean Casserole
Made from scratch with tender green beans baked up in a deliciously creamy mushroom sauce and topped with crispy, golden, buttery breadcrumbs and tangles of caramelized onions.
#8 - Vegan Roast
Roast seitan turkey-style! This can be made days ahead. Let it get to room temperature, then slice. A bit of hot gravy is enough to warm it up.
#9 Vegan Red Wine Gravy
Super tasty and flavorsome gravy infused with sweet vegetables & fresh herbs. This can be made days ahead and warmed gently in a saucepan before serving.

#12 Red Cabbage with Apples
Red cabbage baked with apples, onion, and herbs until it's fall-apart tender.
#13 Festive Mushroom Lentil Loaf
Made with a delicious blend of lentils, mushrooms and walnuts and has a beautifully festive cranberry topping. Those pops of juicy cranberry in every bite are so good, plus they make it look pretty impressive. It would make a great centrepiece on your holiday table!
#14 Pumpkin Mac & Cheese
Tender macaroni with silky, creamy pumpkin-infused cheese sauce, and a golden, bubbly, crusty, and melty cheesy top to finish it off. Ready in 20 minutes!
#15 Incredible Sweet Potato Mash
For the very best flavour and texture, the sweet potatoes are first roasted with rosemary and garlic. This seals the flavours right in for the best concentrated flavour and thick (not watery) texture.
Something Sweet?
For dessert in our house, it's always a toss-up between my pecan pie, pumpkin pie, New York Cheesecake, and Biscoff cheesecake.
I'd quite happily devour all 4, so I let everyone else decide which I should make! ๐
